Travel Ops for Agencies - parse requests, build quotes, plan itineraries

Three rule-based endpoints for travel agencies: (1) parse a free-text client request (WhatsApp/email) into structured JSON - destination, dates, nights, adults, children, budget, currency, interests, plus the fields still missing; (2) build a quote with per-person math, child discount, margin, deposit and terms, returned as JSON + markdown + HTML; (3) generate a day-by-day itinerary skeleton from dates and interests. Deterministic, instant, no LLM, no external calls.
